This salsa is SO much more than just corn and black beans, but fresh avocado, tangy tomatoes, crisp cilantro, and subtly spicy red onion seemed a little too long to include in the title. It all comes together when you mix in fresh lime juice and cumin. This stuff is so good and good FOR you that you’ll start making it for any occasion. Trust us.

Ingredients

  • 1 can black beans rinsed and drained
  • 1 can corn drained
  • 1 cup chopped tomatoes or 3/4 pint of cherry tomatoes, sliced in half
  • 1/2 c purple onion, diced
  • 1 1/2 avocado, diced
  • 1/2 c chopped cilantro
  • 1 tsp cumin
  • 3/4 tsp salt
  • 1/2 tsp garlic powder
  • 1/4 tsp pepper
  • Juice of 1/2 lime
  • 1 bag of tortilla chips
Corn & Black Bean Salsa

Directions

  1. Mix all ingredients together in a bowl and serve immediately or chill.
  2. Scoop with tortilla chips and enjoy!
