Why do I only make Breakfast Casserole on holidays?! This is absurd because it is SO easy and SO good! You whip it up the night before, pop it in the oven when you wake up, and by the time you’ve had your shower and dried your hair, it’s ready to go. Cut up some fruit on the side and BAM (homage to Emeril) – breakfast is served.
Don’t wait until your next holiday for this one. You won’t regret it!
6 large eggs, beaten
2 c. milk
1 lb. cooked sausage (I use Jimmy Dean’s Original)
French bread, sourdough, whatever you like. Just chop it up in 1-inch pieces.
1 tsp. salt
1 tbsp. ground mustard
Pepper to taste ( I used about 1/2 tsp)
Cheddar cheese, shredded (about a cup)
Cook your sausage until no longer pink. Cut your bread into 1-inch pieces and layer in the bottom of a 9×13 inch dish. Spread a layer of cooked sausage over the bread. Beat eggs in a bowl and mix in your milk, ground mustard, salt and pepper. Pour it all over the bread and sausage. Top with shredded cheddar cheese.
Bake on 350° for 40-45 minutes and serve while hot!
